Day 3 - 食好啲 @ Waku Ghin

HB 成日都想食好啲, 所以定咗是日為"食好啲日"
喺香港已訂好位 , 午餐於全球排 100 名內嘅 iggy's, 至於晚餐就喺全球 50 名內嘅 Waku Ghin; 雖然午餐都唔弱, 但晚餐明顯強好多, 所以先寫 Waku Ghin 



Waku Ghin 位於金沙, 只做晚餐, 每晚兩輪 seatings, 每輪 25 位, 佢嘅 owner 係 Tetsuya, 係澳洲雪梨嘅頂級食肆, 喺澳洲以至全球都有好高嘅 ranking 



被安排坐喺鐵板枱前等食 








廚師到啦, 奉上一盆新鮮食材 , 話係是晚十道菜嘅材料, 又問我哋有冇乜嘢唔食或敏感...

另外又為女兒安排兒童餐 (三道菜) 






我哋嘅第一道菜 

Flan of Oyster with Puree of Bacon and Spinach

蠔當然鮮甜, 燉蛋幻滑味美, 食完第一道菜我已經發覺自己同平日唔同: 平日兩道菜之間我會不斷飲水嚟消磨時間, 今次我唔捨得飲水, 好等口腔內嘅甜味逗留得越耐越好!!!

Chilled Cream of Corn and Sweet Corn Ice-cream






我哋嘅第二道菜 

Marinated Botan Ebi with Sea Urchin and Oscietre Caviar

Waku Ghin 嘅 signature dish, 好精彩, 忍唔住喺 greetings 度 post 咗呢個幸福的味道  牡丹蝦經過特別處理醃制, 配合海膽同魚子, 完美組合!!! 隔離個食客用匙羹刮到個海膽殼穿咁滯

Pan Fried Fillet of Ayu with Fennel and Daikon

個魚皮脆肉甜, 配合埋個醬汁, 好有意猶未盡嘅感覺!

Ayu 一定係 in season 嘞, 因為 lunch 都有 Ayu 供選擇...






Tasmanian Abalone with Polenta, Tomato and Garlic Cream

廚師終於出場啦 - 煮鮑魚, 所有嘢都well organized

Braised Canadian Lobster with Tarragon

到龍蝦大爺啦 - 甜美! 

湯汁亦甜美, 用 fish stock 配 paprika mayo 









Venison with Liver Sauce

鹿肉呀兔肉呀野味果啲我通常係唔會掂嘅, 今次當然例外... 雞肝神奇地 enhance 到個 flavor (呢句好茅盾, 我又點知鹿肉原本係乜味呢? Anyway...), 不得不佩服 design 呢個 recipe 嘅師傅! 







Japanese Ohmi Wagyu Roll from Shiga Prefecture with Wasabi and Citrus Soy

聽講話係 Rolls Royce 級嘅和牛, 呢個 course 女兒都有份

跟住上一道好窩心嘅泡飯, 生嘅立魚以"過橋"方式用滾燙嘅自家製清湯將佢燙熟, very comforting and delicious!

最後一道竟然係綠茶一杯, 真係估佢唔到, 廚師話隻茶葉好珍貴, 只取最嫩部份, 喺日本既昂貴又罕有, 要以 40 度溫度冲泡

後感

之前喺 greetings 個 post 提過呢一餐係我近年食過最好嘅一餐 [best of the best, NOT one of the best!] 已經好耐冇試過一餐每一個 course 都咁期待, 而每個 course 每個 detail 都帶到驚喜比你!!!



廚師問鄰坐嘅外籍人事 "How's your dinner?" 外籍人士嘅 reply 係 "I wish I could have a 32-course"  同感、超同意!



幾年前都有去 Tetsuya 試過, Waku Ghin 明顯青出於藍, 超級... Superb!!!
