Miele Valentine Fusion & Molecular Cooking Class

又去上 Miele Cooking Class, 但今次捉錯用神, 將 "Molecular" 放到好大
理解中 Molecular Cooking 需要好多輔助儀器同器材, 未必夠 practical, 卻想瞭解瞭解; 加上主理人出自二星份子料理廚房 Bo Innovation, 令我對呢堂嘅期望又高咗...
結果個 class 只 covered "Fusion", 冇 covered 到 "Molecular"... 有點點失望

Anyway, 個 menu 係由魔廚 Alvin Leung 為情人節設計嘅, 見心思

上堂啦, 歡迎我哋嘅係艷紅嘅 Welcome Drink 同玫瑰 (當然切合主題啦)



材料又真係好 Fusion feel 嘅, 有白味噌、腸粉、紫菜、咸檸檬....

總共做咗三道菜

Atlantic Cod Fish
slow poached with saffron miso sauternes sauce & sparkling sake lime jelly

用 miso 嚟 poach fish, 呢個 idea 又幾好喎

Japanese Wagyu Beef
with black truffle soy & Chinese rice roll

豉油皇炒腸粉加黑松露呢個配搭好正, 香氣撲鼻

和牛好靚, 用猛火每邊煎 2 分鐘, 外脆內軟

制成品


到甜品啦...
Chinese Salty Lemon
soufflé with vanilla ice cream

Souffle 我最近先做嚟, 正好偷偷師

升高啲升高喲

咸檸檬味... well, 我都係鍾意檸檬味多啲

不如比較吓我前日做嘅 cream cheese soufflé 吖
我一路都覺得我啲 soufflé brown 得唔夠, 但今堂之後我又覺得 ok 喎
另外呢個 souffle 用上古古力, 我下次會 skip 咗呢個 item, 因為我唔想 cream cheese 味道被遮蓋!
